Several people have popped up letting me know this hdc problem is a common one. I asked Dee (Stanziano of Crochet with Dee) and she called it a "traveling curve" and confirmed that it is natural - so at least I'm normal in this one thing. LOL She suggested placing the increases in a different spot on each round.
Someone else suggested using the invisible join on each round and restarting the next round in a different spot. That is way too much work for me with too many tails to sew in.
I need to finish the hats since there is a deadline for those, but I will work with the hdc when I can and see what I can figure out.
